For a 21st century global citizen, tofu requires no introduction: it’s a white, soft, and rather tasteless substance but full of nutrients; it’s a meat substitute for those who prefer a plant-based diet; it’s a mysterious product, something between cheese and meat; it’s a symbol of “the Orient.” Whether you agree with any of the statements above or not, there is always more to know about tofu.
To celebrate the AAPI month, Illuminations is inviting you to this “Cooking with a Professor” event to learn more about a stable food from Asia--tofu. Collaborating with Chef Daniel and his team, Professor Daphne Lei will give a brief lecture on the history and versatility of soy and tofu as well as demonstrate a simple tofu dish. Students will have a chance to taste a few different types of tofu. The demystifying journey of tofu starts at the Anteater Demonstration Kitchen.
